No real huge fish but not to bad. Lake Wilson rocks!

I love the taste of catfish. Had some for supper last night. Here is a simple catfish recipe I used.

 

Lemon Pepper Baked Catfish

 

4 6oz Catfish Fillets

1 Tbsp.  Butter

1 Tsp. Black Pepper

1 Tsp. Lemon Juice

 

Directions:

Preheat oven to 400 degrees

 

In a small bowl melt the butter in the microwave, usually 10 seconds or so. Add in the pepper and the lemon juice then stir.

 

Use a foil lined baking dish and spray with nonstick cooking spray. Place each fillet in the dish and then pour the mixture over the top of the fillets. A little bit goes a long way with this recipe.

 

Bake the fish for 30 minutes or until it flakes with a fork.

 

Serve with a baked potato and your favorite vegetable. (I had green beans and garlic bread with a cold bottle of Miller High Life.).

 

Of course you can add other spices if you like, I have added onion flakes, garlic salt, seasoned salt etc  Its all good!

We throw catfish back in these parts... come get all you want haha. :)

 

Nice size fish though and looks like good times!
